Pumpkin Pancakes

Pumpkin Pancakes

1 cup flour
2 tsp baking powder
1 egg
1 cup milk
1 tsp vanilla
1/2 tsp cinnamon
2 Tbsp brown sugar
1/4 tsp cloves
1/4 tsp nutmeg
1/2 cup pumpkin puree or canned pumpkin
2 Tbsp oil

1. Mix together milk, egg, and sugar, and oil.

2. In a separate bowl, mix together flour, baking powder, cinnamon, cloves, and nutmeg.

3. whisk together the dry ingredients in with the wet ingredients.

4. Add in the pumpkin and whisk until smooth.

5. Drop onto hot griddle, 1/4 cup of batter at a time.

6. Cook until top of the pancake is bubbly and popping. Flip and continue cooking about 1 minute.

7. Serve with syrup!
