Carrot Cakesters

Carrot Cakesters

1 box carrot cake mix
3/4 cup water
1/2 cup oil
3 eggs
2/3 cup flour

1. Mix together all ingredients.

2. Spoon mixture, by Tbsp, onto baking sheet. (Using a large cookie sheet, I could fit 12 scoops of mixture.)

3. Bake at 350 for about 10 minutes.

4. Let cool completely.

5. Frost bottom of one "cookie" with Cream Cheese Buttercream and top with additional "cookie."
6. Repeat until all cookies are frosted and sandwiched together.

Cream Cheese Frosting:


1 8oz pkg. cream cheese
1/2 cup butter
6 cups powder sugar
1 Tbsp vanilla extract
2 to 3 Tbsp milk

1. Cream together butter and cream cheese.

2. Add in powdered sugar, 1 cup at a time. Mix until creamy.

3. Add in vanilla and milk.

4. Mix on medium high speed till light and fluffy.
